Why the nickname “The Athletic Chef”?

I have been a competitive athlete my whole life and as a celebrity private chef, I combine my fitness, nutrition and fine dining cooking style all in one.

Now tell us about “Recipe Rehab”?

RR finds a fun way to participate in the effort to curb the rise of obesity in America with a competition that promotes the use of healthy, wholesome ingredients, and demonstrates the positive effects of healthy food choices. Each week Chef Richard Rosendale and I, face off in a competition to give one family’s high-calorie recipe a new low-calorie twist. After the family members try out each recipe in their own kitchen, they decide their new favorite.

Apples and Crunchy Peanut butter.

What is your ideal day at home like?

Wake up to the birds singing, make a cup of tea, take a few minutes and say all that I am grateful for, light a few candles and clean up any mess there may be. Then I would take a cookbook out that I haven’t looked at in a while and start skimming it for new ideas. Probably FaceTime my family members and then go for a walk. I would then get in my kitchen and start recipe testing! If my fiancé was home with me, he would get in the kitchen with me and we would have a great time playing off of each other’s recipe ideas.
