3 Halloween Inspired Grain-Free Recipes

 

1.Pumpkin Muffins

1⁄2 cup melted butter (coconut oil can be substituted as well) 6 cage-free organic eggs

1⁄2 cup pumpkin puree (fresh or canned)

1 tsp vanilla extract

1⁄4 cup maple syrup (or agave) 1⁄2 tsp baking powder

1⁄2 cup coconut flour

1 1⁄2 tsp cinnamon

1⁄4 tsp all spice 1⁄4 tsp cardamom 1⁄4 tsp sea salt

1. Preheat oven to 400 degrees

2. Mix all ingredients together into a smooth consistency.

3. Line muffin tin with Halloween-inspired muffin liners.

4. Fill each muffin liner just under 3/4

5. Bake at 400 degrees for 15-17 min.

2.Halloween Sugar Cookies

2 1⁄2 cups almond flour
1⁄2 tsp sea salt
1⁄4 tsp baking soda
1⁄2 cup melted organic pasture butter (coconut oil can be substituted as well) 5 tsps agave nectar or coconut sugar

1 tsp vanilla extract

1. Preheat oven to 350 degrees
2. Mix wet and dry ingredients together and let sit in the fridge for at least 1 hour. 3. Roll out parchment paper and lightly coat with arrowroot powder or almond flour. 4. Roll out dough with rolling pin to approximately 1/4 inch thickness.

5. Take your Halloween-inspired cookie cutter and cut out your cookies. 6. Bake cookies at 350 degrees for 7-9 minutes.
7. Let cool and serve!

3.Pumpkin Pie

Crust:
1 1/2 cups almond flour
1/4 tsp salt
1/4 tsp baking soda
1/4 cup melted pasture butter (Coconut oil may be substituted) 2 tbsp pure maple syrup
1 tsp vanilla extract

1. Melt pasture butter in a saucepan on low.
2. Combine wet and dry ingredients.
3. Coat glass pie dish with a bit of either butter or coconut oil.
4. Press the mixture into a crust starting at center of the pie dish. 5. Bake at 350 for 10 min.
6. Remove and let cool. Start your filling.

Filling:
1 tablespoon arrowroot powder
2 cans of organic pumpkin puree 3 eggs, separated
1/2 cup coconut milk
2/3 cup pure maple syrup
3/4 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt

1. In a saucepan mix all ingredients together and cook at medium heat (stirring constantly).

2. Let cool to room temperature.

3. Pour room temperature liquid mix into pie crust.

4. Place pie into fridge and let set and cool (minimum 1 hour)
